Even though I am not a vegan, I eat a lot of beans as my protein, and one of my favorites soups is black bean. In order to make this black bean soup very flavorful, I made a broth with a medley of vegetables (onion, carrot, celery and garlic) and added cumin, coriander and thyme spices to give it that depth of flavor.
INGREDIENTS:
- Black Beans (3 cups)
- Water (12-13 cups)
- Carrot (2 stalks)
- Celery (2-3 stalks)
- Onion (1 piece)
- Garlic (5-6 cloves)
- Cumin (3 teaspoons)
- Thyme (1 teaspoon)
- Coriander (1 teaspoon)
- Salt (2 teaspoon)
- Pepper (2 teaspoon)
