For all of you vegetarians who feel left out on turkey Thanksgiving day, I made a tofu loaf with spinach, mushrooms, zucchini, carrot and peas, and flavored with paprika, coriander and cumin spices. The tofu loaf is then topped with Japanese panko breading for crispy golden brown on top.
Ingredients:
- Firm or Extra Firm Tofu (3 cakes)
- Zucchini (1, diced)
- Mushrooms (8 oz)
- Frozen Peas & Carrot (1 1/2 cup)
- Frozen Spinach (16 oz. bag)
- Garlic (5 cloves, minced)
- Paprika (3 teaspoons)
- Cumin (3 teaspoons)
- Coriander (3 teaspoons)
- Salt (3 teaspoons)
- Pepper (1 1/2 teaspoon)
- Olive Oil (1/2 cup into casserole)
- Panko Breading (2 cups, 1 cup goes into loaf and 1 cup for top of loaf)
- Eggs (4 beaten)
