I went decadent by making my own version of french fries. Sweet potatoes are thinly sliced, then dipped into a Japanese Panko with Black Sesame Seed breading, and deep fried to crispy golden brown perfection.
Ingredients:
- Sweet Potatoes (thinly sliced)
- Japanese Panko Bread Crumbs
- Toasted Black Sesame Seeds
- All Purpose Flour
- Egg
- Salt
- High Temperature Oil, like Safflower or Canola or Peanut Oil

Instructions:
1) Wash your sweet potatoes, and with a paper towel, dry sweet potatoes. With a mandolin or knife, thinly slice the sweet potatoes leaving skin on.
2) In a container, add Panko bread crumbs. Add sesame seeds and a pinch of salt. With your hands, mix in the black sesame seeds into Panko bread crumbs.
3) On a plate, add some all purpose flour.
4) In a bowl, beat a couple of eggs.
5) Like an assembly line, line up your flour, beaten egg, and Panko bread crumbs.
6) Take a sliced sweet potato and cover it with flour first. Then dip potato into egg, making sure every part of the potato is covered with egg. Then dip into Panko Sesame Seed breading, making sure both sides are covered with Panko breading.
7) In a large cast iron skillet or a deep fryer, add your oil. Get oil hot to about 375 F or you can use a chopsticks to do a test. When oil bubbles form around chopsticks, it means the oil is at the right temperature.
8) Place fritters in the oil and make sure that there is a little space between each fritter, so that the fritters fry well. Do not fry too many fritters at once. Once fitters are crispy golden brown on 1 side (about 1 minute of frying), then flip and cook the other side (about another minute of frying).
9) On a plate, place paper towel. Place cooked fritters on paper towel and sprinkle some salt while the fritters are hot.
