I love the soft texture of zucchinis when they’re steamed because they retain their delicate flavor. Here’s a light pot steamed zucchini recipe with bell pepper, onion, and garlic flavored with sesame oil and sesame seeds for that delicious toasty flavor. Healthy, light and delicious!
Ingredients:
- Green Zucchini (2 pieces, thinly sliced)
- White Onion (1 small one or 1/2 of one large onion, thinly sliced)
- Red Bell Pepper (1 small one thinly sliced)
- Garlic (4 cloves, minced)
- Sesame Oil (1tablespoon)
- Sesame Seeds (1 tablespoon)
- Salt (1 teaspoon)
- Pepper (1/2 teaspoon)
- Water (1/4 cup)

Instructions:
Ingredients you will need:
1) Slice up your zucchini, bell pepper, onion, and garlic. Set aside.
2) In a large pot, drop 1/4 cup of water. Add all the vegetables. Add salt and pepper. Close lid and steam cook for up to10 minutes (do not cook for more than 10 minutes, can even be 7-8 minutes).
3) Turn off flame, add sesame oil and sesame seeds. Lightly toss so the sesame oil and sesame seeds cover the vegetables.
Serve with rice, 4-6 servings
Oh, that sounds wonderful. I’ll get the sesame oil on my next trip to the grocery, already have the rest. Weather is so changeable around here this month. Yesterday in was in the low 20’s, no it is 62. No one knows how to dress when they go out, but with the sun shining, who cares? I’m getting more movement in my shoulder on the good, sunny days, less movement and more pain on the bad ones. When spring actually gets here, and brings us more sunshine I hope it will help me fight thru the pain more easily and get more movement in the shoulder. Best so far has been getting it over my head with help from the right arm about 170 degrees. Soon….

Sun is also wonderful for aching joints and depressed spirits. Today though we are under a severe weather advisory. It figures. At least we had a couple of nice days to get out in.and soak up some sun.
Yes, I agree about the sun healing those aches and depression. They say that in Iceland, where they have the least amount of sunlight, has the highest rate of suicide. That is why I prefer to wake up early and sleep earlier so I can have more day than night, even though my name is Moon! LOL!
My name is a derivative of Angel, so I have always pictured myself dancing in the sky at night. Could be why I’m a night person more than a day one. But I do love soaking up some sunshine in the spring. Trickier in the summer because MS and heat are a bad combination.
