- Chinese Eggplant (2 or 1 Western eggplant if you can’t find Asian eggplant)
- Red Bell Pepper (1)
- Green Jalapeño (1)
- Scallion (3 Stalks)
Dressing Marinade:
- Soy Sauce (5 tablespoons)
- Sesame Oil (1/4 cup)
- Sesame Seeds (2 tablespoons)
- Honey (1 1/2 tablespoon)
- Water (add water to soy sauce and sesame oil to make it one cup of liquid)
- Garlic (4 cloves, minced)
