I eat a lot of salads so I am always looking for new salad dressing recipes. My love for carrot and ginger was my inspiration for this light, healthy and smooth carrot and ginger dressing with olive oil, which you can place on any salad.
Ingredients:
- Carrots (6 small to medium size, peeled and sliced into chunks)
- Ginger (about 2 inches, peeled)
- Rice Vinegar (3 tablespoons)
- Water (1 cup)
- Honey (2 teaspoons)
- Olive oil (4 tablespoons)
- Salt (1/2 teaspoon)
Instructions:
Ingredients you will need:
1) Peel your carrot and ginger. Slice your carrot in smaller pieces.
2) Place carrot and ginger in your blender.
3) Add water, salt, honey, rice vinegar and olive oil.
4) Blend until creamy smooth
5) Transfer dressing into smaller glass container and place in refrigerator until dressing cools.
6) Serve dressing over your salad. Serves 6.
Hi Moon, I love this recipe. I am a carrot fan from birth and love ginger also, so this is a match made in heaven for me.
I’ve lost my blog on WordPress, and I’m thinking about starting one on Disqus. Do you think a blog about just living life the way I do every day, getting into funny trouble, and getting out of it and just enjoying myself every day with the way life happens will go over with this blog site? The old one just keeps shutting me out of my blog, and closing down on me, so I really want to start over somewhere that I can keep it open. Is this one free? Can you give me some tips about it?

Hi Angie… I do not know what you mean that the old one keeps shutting down. I think you should blog about what you’re passionate about. It is easy to blog when you love a topic, so if you are passionate about your daily life, then do so! Love and passion are all it takes in my book….
Hi Moon. When I said it keeps shutting down, I really meant it shuts me out. I try to log in and they won’t accept my password. When I try resetting my password they won’t accept that either, so I’ve given up on them. It’s okay though, because I started a new blog tonight on Goggle Blogger and I’m also importing it on Disqus, so that should give me a whole new audience. This way you will be able to read it also if you want. I hope you give it a try and like what you see. I usually share memories from my past, things I do every day that end up being too funny to believe, and things about my family that they would love to kill me for sharing. They really don’t care that much though. I think they actually enjoy reading some of the thing I say about them.
OK, I looove people’s stories, which are what truly inspire me to do my work. My passion is to serve my fellow humans with happy and healthy living messages, and each of us has a singular journey in this life that is truly magical, so I am sure your story is wonderful…
I’m happy to hear that. I’ve been working on getting the site set up, and should start posting soon. A lot of what I blog is funny things that happen to me every day, stories about my family and a lot of my memories, and I try to put photos in to go with them. So, I have seen that I create circles, and will look for you to add you to my circle, once I get things running right. I really love blogging and writing, and just laughing about a lot of the things that happen to me every day, even the ones that would make a sane person sit down and cry. I decided long ago that I could sit and cry about it, or just look at the mess, see the humor in it, clean it up after taking a photo of it, then laugh about it. Like, okay, you dropped the casserole and it’s all over the floor, but that’s one dish you don’t have to wash, because it broke.
I share your passion for writing…If I were to pick one thing to do on my blog, I would write…writing gives me such a connection to God and this Universe….
For me it’s a release, a way to reach out to people, share my life, show that even though I’ve lived with an incurable disease like MS all my life that’s no excuse to give up and stop living, or sit back and just ask for pity. I guess that is a connection to God and the Universe, an example to my grandkids to never give up, and a way to pull myself up on the worst of days when I feel like I would love to sit and moan. I can get up and start writing it all down and laughing about it, and realize there are so many people worse off in the world, that I am truly blessed. I have food enough to share, a place to live, money enough to get by, and the most important, friends who accept me for who and what I am, and who also love to laugh with me about the things they say would have them climbing the walls. But in the scheme of things, who will even care 50 years from now? Or 10 years? When I’ve passed on I want people to remember me with smiles on their faces, not tears of regret. Regret would mean I had wasted my life.
