I show you my coconut mango rice with curry chicken. The rice is cooked in coconut milk and fresh mangos and then paired with curry chicken — perfect balance of savory and a little sweet.

- Mango (1 Western mango or 2 Asian mangos, cubed)
- Coconut Milk (1 13 oz. can)
- Water (1 cup)
- Salt (1 teaspoon)
- Chicken breast (1 lb., cubed)
- Garlic (3 cloves, minced)
- Curry Powder (1 tablespoon)
- Paprika Powder (1 teaspoon)
- Cilantro (diced)
