This is a recipe that was inspired by my late sister Sun, who one day concocted this wonderful sweet yet savory mango salsa with tomato, red onion and cilantro, and placed it over pan fried halibut. I loved it so much that I never forgot the recipe after all these years.
Ingredients:
Halibut or any white flaky fish (1.5 – 2 lbs)
Fruit and Vegetables for Salsa:
- Asian Mango (2) or 1 large Western Mango
- Tomato (4 small or 2 large, diced)
- Red Onion (1/2 of one, diced)
- Cilantro or Parsley (handful)
Dressing for Salsa:
- Garlic (2 cloves, minced)
- Lemon (juice of 2 lemons)
- Rice Vinegar (1 tablespoon)
- Olive Oil (1 tablespoon)
- Honey (1 teaspoon)
- Salt (1/2 teaspoon)
- Pepper (1/2 teaspoon)
