We turn the blueberry or banana pancake upside down into savory chive pancakes! Traditionally eaten in Korea, this recipe will make you think twice about pancakes!
Ingredients:
- 3 bunches of chives
- 2 cups all purpose flour
- 1 ¾ cups of water
- 2 eggs
- ½ tablespoon of salt
- canola or grapeseed oil
Sauce:
- Soy sauce
- Rice wine vinegar
Directions:
1) In a large bowl, mix flour, water, eggs and salt. Mix well until batter forms. Batter should not be too thick or too liquid. Cut chives into 2 inch lengths. Incorporate chives into batter. Use hands is the best way.
2) In a large frying pan, heat up oil to medium heat. Take a ladle full of chive in batter and place in center of pan. Take ladle and push the chive in batter to make the pancake round and thin. Continue to push down on pancake for a couple of minutes until the pancake shape has formed and is thin (no thicker than ¼ of an inch). Once pancake is crispy on one side, then flip until crispy on the other side. On cutting board, chop pancake into small pieces
3) Mix soy sauce and vinegar 2:1 ratio. Serve with sauce on the side for dipping.
