For this year’s Super Bowl party, why not kick up your menu with an exotic yet delicious Thai dish: Chicken Satay with Peanut Sauce. The chicken is marinaded in coconut milk and curry and then paired with a savory peanut sauce.

INGREDIENTS:

  • Chicken Breasts (1 chicken breast will produce about 4 sticks)
  • Coconut Milk (1 can)
  • Curry Powder (1 tablespoon)
  • Salt
  • Pepper

Peanut Sauce

  • Unsalted Creamy Smooth Peanut Butter (8-9 ounces)
  • Coconut Milk (1 can)
  • Fish Sauce (2 tablespoons)
  • Cumin Powder (1 teaspoon)
  • Coriander (1 tablespoon)
  • Sambal (3 tablespoons)
  • Salt (1 teaspoon)
  • Garlic (1 bulb, roasted)
  • Red Onion (1/2 of 1 onion, roasted)
