Potato with Eggplant in Sesame Dressing

I pair Chinese eggplants with potatoes and cook it in a delicious sesame soy dressing.  Because this recipe is so hearty and delicious, I know you’ll go to it over and over again.

INGREDIENTS:

  • Russet Potatoes (2 large)
  • Chinese Eggplant (2 or 1 Western eggplant if you can’t find Asian eggplant)
  • Red Bell Pepper (1)
  • Green Jalapeño (1)
  • Scallion (3 Stalks)

Dressing Marinade:

  • Soy Sauce (5 tablespoons)
  • Sesame Oil (1/4 cup)
  • Sesame Seeds (2 tablespoons)
  • Honey (1 1/2 tablespoon)
  • Water (add water to soy sauce and sesame oil to make it one cup of liquid)
  • Garlic (4 cloves, minced)
